So, you all probably remember my review and giveaway for the gluten-free Microwave Mug Cakes. Well, for those of us who are not on gluten-free diets I have some exciting news!!
Stacey Miller, the author of 101 Recipes for Gluten-Free Microwave Mug Cakes has generously offered to give away her other book, entitled 101 Recipes for Microwave Mug Cakes! I was very excited that Stacey wanted to work with me again and that I was sent a recipe book to review.
In case you do not recall, Microwave Mug Cakes are single serving cakes that are put into a microwaveable coffee mug, microwaved and ready in less than 10 minutes. It is an idea that I had never heard of and was very excited about. How many times have you found yourself craving a dessert but didn't want to make a whole cake? I don't have alot of people in my family so it doesn't make alot of sense to make a huge cake...because I would probably eat it all by myself and THAT would be down right embarassing. :)
Mix the ingredients in a small bowl. Beat egg first with a spoon and mix in other liquid ingredients. Then add dry ingredients and mix until you have removed all the lumps.
Pour the batter into the mug (do not fill more than halfway) and smooth the top with a spoon. Thump mug firmly on the tabletop 6 times to remove excess air bubbles. Place mug on top of a microwavable small plate or saucer.
Bake for 3-4 minutes. Check for doneness by inserting a toothpick in the middle of the microwave mug cake and removing the toothpick. If the toothpick is dry, the cake is done.
Wait 2 minutes, then run a butter knife along the inside of the mug, and tip the cake onto the plate. Position the mug cake so that the slightly rounded top is on top. Your microwave mug cake will now look like a slightly overgrown muffin.
I had to laugh when my mug cake was done. After I inverted it onto the plate, mine looked more like a log than a muffin! HAA!!!

As soon as I received my recipe book, I dove right in and tried a recipe! I was so very excited!!!
I chose to try the Baked Apple Vanilla Microwave Mug Cake
1 egg
1 Tbsp. applesauce
1 Tbsp. oil
1/8 tsp. vanilla extract
1/8 tsp. baking powder
1/4 tsp. cinnamon
4 Tbsp. light brown sugar
2 Tbsp. instant vanilla pudding powder (unprepared)
4 Tbsp. all purpose flour
Prepare mug by coating the inside lightly with cooking spray.
I also made a slight modification to the recipe. I did not have any vanilla pudding on hand so I used chocolate instead...oh, and I threw in some chocolate chips too. It was VERY good. Topped with whipped cream, my daughter and I enjoyed our dessert together!
So, in my opinion...101 Recipes for Microwave Mug Cakes is a FANTASTIC cookbook! I love all the recipes that are included and the ease in which you can create a delicious dessert in such a short amount of time!

I only found the two books on the site and I don't need the gluten free (thankfully), so I would go for the one you are giving away. It sounds like an awesome choice and the nice thing is, you don't have an entire cake sitting there tempting you! Just a perfect size.
