Savoring Summertime: Blueberry Streusel Coffee Cake

Sometimes it is soo hard to get up on a Saturday morning, isn't it? Well, here is a recipe that will be sure to get your family out of bed...guaranteed! I love blueberries and they really are a wonderful super food to help get your body going. I have made this recipe for years and it always is a huge hit! So, here it is! Hope you enjoy! :)

BLUEBERY STREUSEL COFFEE CAKE

2 C. flour
3/4 C. sugar
2 tsp. baking powder
1/4 tsp. salt
Combine.
Then, Add:
1/2 C. milk
1 beaten egg
1/2 C. butter or margarine, softened
Beat well.
Fold in:
1 C. Fresh or frozen blueberries (I sometimes add more because I love alot of blueberries)
1 C. Chopped pecans or walnuts (optional)

Spread in greased 9 inch square baking pan. (Batter will be stiff) In another bowl, prepare streusel.

Streusel:
1/2 C. sugar
1/3 C. flour
1/4 C. cold butter or margarine.

Combine sugar and flour. Cut in butter/margarine until crumbly.
Sprinkle over batter. Bake at 375 degrees for 35-40 minutes until toothpick comes out clean.

***Note*** For a larger cake (13X9 size pan) double all ingredients and bake for one hour.
These are blueberries that we picked ourselves last summer. They are HUGE and end up being so juicy.
Preparing the streusel. I uses a pastry cutter as it is quick at cutting the butter.
Baking in the oven!
All done! Melts in your mouth!
