Savoring Summertime: Summer Cucumber Salad

Hope you are all enjoying your summer! Here is another (possibly my most favorite) recipe that I wanted to share with you all today. I have loads of fresh cucumbers from my garden this year and so I have been enjoying this salad quite a bit recently. Hope you like it! Don't eat it all in one sitting. :)

Cucumber Salad With Sour Cream Dressing

3 Medium Cucumbers, peeled and sliced
1 Sweet Onion, peeled and sliced
Dressing:
1 C. Sour Cream
1/3 C. Vinegar (apple cider)
2+1/2 Tablespoons Sugar
salt and pepper

Place sliced cucumbers and onions in a bowl and cover with ice cubes. Sprinkle with salt and let sit for about an hour. Stir occassionally. Mix dressing, drain and rinse cucumbers and onions~remove ice cubes. Pour dressing over cucumbers and toss. Refrigerate. ENJOY!!! :)

    I love Cucmbers! At the expense of sounding like a big dumbo I always wondered what folks meant by a cucumber salad...now I know :)

    Sounds fab but then again you had me at cucumber!
