Savoring Summertime: Zucchini Carrot Muffins

If you have a garden, like me, and you planted zucchini...like me, then you are probably getting zucchini by the bucket load by now...like me!!! Well, I found this recipe the other day and tried it for the first time and my oh my....was it ever yummy!!! Instead of using the full amount of oil, I use half apple sauce and that makes a moister, healthier muffin. This recipe is super easy and tastes very yummy too...enjoy!

Zucchini Carrot Muffins (or Bread)
3 eggs
1 c. oil
1 1/2 c. brown sugar
1/2 c. bran flakes
1 tsp. baking soda
1 tsp. salt
1 c. nuts (opt.)
1 c. grated zucchini
1 c. grated carrots
2 tsp. vanilla
2 1/2 c. flour
1 tsp. baking powder
3 tsp cinnamon

Mix everything together and spoon into paper-lined muffin pans (or spray your pans with cooking spray...whatever method you prefer!). Bake at 325 degrees for 30 mins. Muffins are done when the tops spring back when touched. For bread, grease pans. I am unsure of exact baking time as my recipe didn't say...I would suggest about 45 min.
